It’s summer and melon is in season! It’s time for a nice and refreshing ice cream!
No Churn Melon Ice Cream
Very easy recipe of no churn melon ice cream.
Equipment
- Hand-held mixer
- Mixing bowl
- Sauce pan
- Spatula
- Blender
Ingredients
- 1 cup heavy cream
- 1/2 cup white sugar
- 1 tsp vanilla extract
- 500 g Melon pulp
- 3 pcs yolks
Instructions
- Blend the melon pulp until smooth. Put it aside.
- In a heat-proof bowl or the top of a double boiler, whisk the egg yolks, sugar and vanilla. Whisk it until thick, creamy and light yellow. Set aside.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Fold the cream to the egg yolks mixture.
- Add the blended melon to the cream and egg yolk mixture. Mix well.
- Freeze overnight.
