Super easy tortang talong recipe

Tortang Talong is a traditional Filipino dish that features grilled eggplant (talong) dipped in whisked eggs and then fried until golden brown. The “torta” translates to “omelette” and “talong” is eggplant in English. It’s a simple yet flavorful dish commonly served for breakfast, lunch, or dinner in the Philippines.

Grilling the eggplant until the eggplant’s skin is charred is one of the preparations in making this delicious dish.  Instead of grilling, eggplant can be broiled in the oven until it’s soft and slightly charred. After peeling off the charred skin, the eggplant is then flattened and dipped in beaten eggs seasoned with salt and pepper. It is then fried until the egg coating is cooked through and lightly crispy.

Tortang Talong is  served with rice and a dipping sauce such as toyomansi(soy sauce and calamansi) or ketchup. It’s a versatile dish that can also be customized by adding ingredients like minced garlic, chopped onions, diced tomatoes, or cooked ground meat to the egg mixture for added flavor and texture.

For me, grilling the eggplant over open flame is the fastest way of grilling. It might work for you too.

Ingredients

  • 2 pieces egg plant
  • 3 pieces eggs
  • 1 tbsp oil
  • salt and pepper to taste

Instructions

  • Poke the eggplants using a fork.
  • Grill the eggplants over an open flame (gas stove or grill) until the skins are charred.
  • Run the charred eggplants with water to cool it down.
  • While cooling the eggplants, whisk the eggs and add salt and pepper.
  • Once the eggplants are cool, peel off the charred skin leaving the stems intact.
  • Dip the eggplants into the prepared egg, making sure it's coated on both sides
  • Gently flatten each eggplant with the back of a fork while ensuring that stems are still intact.
  • Heat cooking oil in a pan over medium heat.
  • Carefully place the eggplant into the pan.
  • Cook for 2-3 minutes on each side, or until the eggs are fully set and the omelette or tortang talong is golden brown.
  • When finished cooking, transfer the tortang talong to a plate.
