Instructions
Poke the eggplants using a fork.
Grill the eggplants over an open flame (gas stove or grill) until the skins are charred.
Run the charred eggplants with water to cool it down.
While cooling the eggplants, whisk the eggs and add salt and pepper.
Once the eggplants are cool, peel off the charred skin leaving the stems intact.
Dip the eggplants into the prepared egg, making sure it's coated on both sides
Gently flatten each eggplant with the back of a fork while ensuring that stems are still intact.
Heat cooking oil in a pan over medium heat.
Carefully place the eggplant into the pan.
Cook for 2-3 minutes on each side, or until the eggs are fully set and the omelette or tortang talong is golden brown.
When finished cooking, transfer the tortang talong to a plate.
