No Churn Melon Ice Cream

Very easy recipe of no churn melon ice cream.

- 1 cup heavy cream
- 1/2 cup white sugar
- 1 tsp vanilla extract
- 500 g Melon pulp
- 3 pcs yolks
Blend the melon pulp until smooth. Put it aside.
In a heat-proof bowl or the top of a double boiler, whisk the egg yolks, sugar and vanilla. Whisk it until thick, creamy and light yellow. Set aside.
In a separate bowl, whip the heavy cream until stiff peaks form.
Fold the cream to the egg yolks mixture.
Add the blended melon to the cream and egg yolk mixture. Mix well.
Freeze overnight.
